Step 1
Halve the dates and remove the pits. Place all ingredients except the coconut flakes into a high-powered blender or food processor and blend until a slightly sticky, malleable mixture forms. Stop frequently and scrape down the sides of the bowl. If the blender gets too hot, take a short break occasionally.
Ingredients (for 15 pieces)
200g soft dates (e.g. Medjool dates)
90g cashew nuts (or other nuts)
1 tbsp nut butter (e.g. almond butter, cashew butter)
1 tbsp chia seeds
1 tbsp baking cocoa
4 tsp PhoebeCollagen Pure
ASIDE FROM THAT
2 to 3 tablespoons
desiccated coconut
Step 2
25 g desiccated coconut
For the basic recipe (see above), form about 15 equally sized balls from the mixture. Place coconut flakes in a deep plate and roll each power ball individually in them. Then enjoy immediately or store in an airtight container.
